Oven Baked Crab Cakes

1 pound of Crab Meat
Salt & Pepper to Taste
3 Heaping T of Mayonnaise or Miracle Whip
1 T of Yellow Mustard
1 Egg Well Beaten
10 Crackers Crushed (Saltine & Ritz)

Mix all ingredients well and fold in the crab meat gently
Drop crab cakes on well-greased cookie sheet
Sprinkle with Old Bay Seasoning
Top with slivers of butter (optional)
Bake for 20 minutes at 350 degrees

Smith Island Crab Dip

8oz Cream Cheese
1T Worcestershire Sauce
1 Dash of Garlic Salt
1T of Lemon Juice
1/2 cup of Mayonnaise or Miracle Whip
1/4 cup of Sour Cream
1/2 cup to 1 cup Grated Cheddar Cheese
1 lb Crab Meat

Mix the first 6 ingredients with a mixer
Gently stir in crab meat with a fork
Spread in a square baking dish
Top with grated Cheddar Cheese
Bake for 30 minutes at 350 degrees
Serve hot with crackers

Crab Loaf

1 lb Crab Meat
2 Eggs (boiled)
1/3 Cup of cream (or evaporated milk)
1/2 cup of Butter
1t Yellow Mustard
1t Apple Cider Vinegar
1t flour
Salt & Pepper to taste
1T parsley Flake
Bread crumbs (enough to cover crab mixture)

Mash egg yolks
Add in 1t of yellow mustard and apple cider vinegar
Mix these ingredients and gently fold in the crab meat
Put flour, cream/evaporated milk and butter in saucepan and stir until thickens. Pour over crab meat while hot.
Mix and pour in buttered casserole dish and top with bread crumbs and dot with butter.
Bake at 350 degrees for approximately 30 minutes or until breadcrumbs are browned.

Crab Burgers

1 lb of Crab Meat
1/2 Small Yellow Onion, Diced
1/4 Cup Green Pepper, Diced
Dash of Old Bay Seasoning
Enough Mayonnaise or Miracle Whip
Dash of Pepper
Mozzarella Cheese
8 Hamburger Rolls or English Muffins

Mix together mayonnaise or salad dressing, onion, green pepper, Old Bay and a dash of pepper and gently fold in crab meat.
Put hamburger rolls or english muffins open faced under broiler with a little butter on them until toasted
Take bread out of oven and top with crab mixture.
Top with mozzarella cheese
Bake at 350 degrees until the cheese is slightly melted.
